What is the best way to fend off attacking dogs?

My companion and I were riding down a dirt road and some puppies ran out in front of us, so we stopped to pet them. They were all around us, and we were crouching down playing with them when I heard a loud growl. I turned around to see a furious mama pit bull barreling towards us, fangs bared. She lunged at me, and I instinctively swung at her with my flip chart. I used to play a lot of baseball. I caught her in the side of the head; the blow was hard enough to knock her off her feet and roll her over a few times. She got up and ran off, and we got on our bikes and went the other way really fast.
