aloha to Laid Back Poke Shack, the restaurant dedicated to serving up authentic and fresh Hawaiian food in our very own Salt Lake City. For those unfamiliar with Hawaiian culture and cuisine,
poke (poh-KAY) is the Hawaiian verb “to slice or cut into cubes,” and Laid Back prepares its selection of cubed, raw fish by marinating it with sea salt, a drizzle of soy sauce,
inamona (roasted crushed candlenut), sesame oil, limu seaweed, and chopped chili pepper. Picking a
poke for your bowl can be quite an undertaking, as there are dozens to choose from— favorites include the spicy crab, sweet-chili shrimp or the ginger ahi, although there are no wrong choices at this
luau.
