A vegetarian 12-year-old can do without school-cafeteria meat nuggets and the like, but abstinence from childhood delights such as Twinkies can have lingering effects. So, now two decades older, Kelly Colobella, owner of Cakewalk Baking Company, concocted the Dillo, a sumptuous fingercake filled with vegan cream that far exceeds those mass-produced pastries mummified by preservatives. “I had to do it. It’s all stuff that I missed [as a vegan],” she says.

Cakewalk customers can find Dillos, cookies, cupcakes, pastries and éclairs. Though certified with vegan ingredients, they also appeal to nonvegans. “I was sure the éclair would never be vegan-ized; I missed it more than anything. I just kept experimenting until I got it,” says Colobella, who guards the secret ingredients of this vegan recipe as though it's the Holy Grail.

Her recipes have been tweaked throughout 18 years of being vegan. “I have made a lot of bad [vegan] birthday cakes over the years,” says Colobella with a laugh. She began to sell goodies to raise money for her dog’s medical bills in 2006. With demand for baked goods remaining high, in 2008, she opened her first professional bakery in Woods Cross. Her second store opened in Salt Lake City six months ago. The new nook includes a grocery store filled with specialty vegan goods like marshmallows, jerky, cheese, soft-serve vegan ice cream and more.

Whether you’re already immersed in veganism or just figuring out where to begin, Cakewalk can help. “We do it just to make the transition easier. I don’t want people to feel left out,” Colobella says.
