Wine Wednesday: Scarbolo Winery @ Franck's

Next Monday, April 20th, Franck's restaurant in Holladay will host a very special wine dinner featuring the Italian wines of Scarbolo Winery, which produces some of the finest wines from the Friuli-Venezia-Giulia region of Italy.

On hand for the wine pairing dinner will be winemaker Valter Scarbolo and Italian wine expert and importer, Marco Stevanoni. According to Valter Scarbolo, he "acquired his passion for wine making from his father, Gino." 

In addition to fine Italian wines, chefs Robert Perkins and Adam Vickers have created a four course menu to be paired with four Scarbolo wines. The menu and pairings are as follows: 

Prosciutto Di San Daniele, Creminelli Cured Meats, Pickled Rhubarb & Romanesco, Spiced Apricot Puree, Smoked Pork Fat Almonds + 2014 Scarbolo Friulano

Roasted Turbot & Butter Basted Clams, Lobster-Creme Fraiche Risotto, Citrus-Tarragon Foam + 2012 Scarbolo Pinot Grigio Ramato XL

Red Wine Braised Snake River Farms Pork Stew, Montasio Cheese Polenta, Herb Salad + 2011 Scarbolo Refosco dal Peduncolo Rosso

Seared Rosewood Farms Wagyu Beef Spinalis, Variations of Turnip, Grilled Ramps, Blueberry-Red Wine Gastrique + 2011 Scarbolo Merlot “Campo del Viotto"


The cost for the Scarbolo wine pairing dinner at Franck's, which begins at 7:00 PM, is $95 per person (a la carte $50/wine and $45/food).
