Monday Meal: Sriracha-Soy Pork Skewers

An easy, spicy recipe for Sriracha-grilled pork skewers

Since this early spring has felt more like summer, I've been doing a lot more grilling outdoors than usual. Here's a really easy, but extremely tasty way to add some spice and flavor to pork skewers on the grill. The marinade of Sriracha, soy and mustard makes for a tangy treat. Don't worry, the pork isn't overly spicy, but will still satisfy heat seekers.  

You could make the skewers using only pork or you can add veggies and fruits like onion, peppers, pineapple, cherry tomatoes, mushrooms, etc. 

Ingredients: 

1/4 cup mustard, preferably Dijon

1/4 cup olive or canola oil 

1/4 cup soy sauce

1/4 cup Sriracha

3 limes, juiced

1 clove garlic, peeled and minced

1 tsp. ground cumin seed

1/4 cup chopped parsley

1 to 1 1/2 lbs. boneless pork, cut into 1-inch cubes

Method: 

In a large bowl, whisk together all of the ingredients except the pork.

When the marinade is well blended, add the pork cubes to the bowl and refrigerate for up to 4 hours.

Thread the pork cubes onto skewers for grilling, alternating with pieces of fruits and vegetables if you'd like.

Prepare a grill for medium heat. 

Cook the skewers on the grill, turning occasionally to cook on all sides, for about 8 to 10 minutes of total cooking time or until the pork is cooked through.
