TV Tonight: Cougar Town, Undercovers, Hell's Kitchen

Wednesday night is the new Thursday night: Too damn much stuff going head-to-head-to-head in primetime. After a few cancellations, however, things should settle (looking at you, Jim Belushi). ---

What’s new tonight:
Cougar Town (ABC) Season Premiere: Modern Family gets the hype, but Courteney Cox’s Cougar Town is the underdog ensemble comedy to check out on Wednesdays—they’re even bringing in ex-Friend Jennifer Aniston to grab some attention. She plays Cox’s new psychiatrist, which is funny all on its own.

Undercovers (NBC) Series Debut: They’re spies! They’re married! They’re gorgeous! They like to cook! This is a J.J. Abrams joint, so Alias comparisons are inevitable, not to mention Mr. & Mrs. Smith and a dozen other far more interesting spy yarns—maybe even Top Chef. Undercovers isn’t as smart/funny as Chuck, but at least it has better recipes.

Hell’s Kitchen (Fox) Season Premiere: Gordon Ramsay back where he belongs: Screaming at hapless chefs instead of encouraging them. You donkey!

The Defenders (CBS) Series Debut: Jim Belushi and Jerry O’Connell are Las Vegas defense lawyers. Somehow, it’s even worse than that sounds. Can we have Shark back now, CBS?

If The Defenders keeps Natalie Zea (O’Connell’s girlfriend, apparently) from working on FX’s Justified, a far worse crime has been committed in Vegas:
