In honor of Mardi Gras, I salute the "debris" sandwich, a po' boy made famous by Mother's restaurant in New Orleans. It's one of the tastiest things I've ever gotten my lips around.
What is "debris?" Well, according to Mother's, "When a customer asked Simon Landry to add the bits of roast beef that had fallen into the gravy while he was carving it to his sandwich, he replied 'you mean some of the debris?' And just like that, a definitive Mother's term was coined."
