Tucked away in the elegant Chateaux at Silver Lake, this unique restaurant is Deer Valley’s only fine dining restaurant to feature French cuisine. The Bistro Toujours experience begins with crusty French baguettes served with whole roasted garlic for spreading. Some favorite first courses include Escargots en Coquilles (baked in shell with herbed garlic butter), Charcuterie (Herbes de provence salami, foie gras pâté, cornichons and grilled baguette), Mussels à la Marinière (Steamed Prince Edward Island Mussels with white wine, fresh herbs and béarnaise). Salads and Soups include Bistro Frisée Salad, classic French Onion Soup, and Butternut Squash Bisque.
Chef Specialties include Duck au Poire (Pan-seared Maple Leaf Farms duck breast, chanterelle mushrooms and walnut ragout, roasted pear, and a blackberry and orange gastrique), Morgan Valley Rack of Lamb (Pistachio crusted Morgan Valley rack of lamb with pommes anna, candied French carrots and blueberry gastrique), Pan Seared Idaho Red Trout (Green apple, celery root and chive crème fraîche slaw). Other specialties from the grill include Bone-In 14oz. Ribeye and and Wood-Fired Filet Mignon.
