Diamond Lil’s originally opened in November 1969, with a seating capacity of 32 people. Today, the restaurant can service about 500 customers and has become a Utah landmark. A Western-style steakhouse, the specialty of the house is Diamond Lil’s succulent Prime rib—the “bandit” cut is so large “you can’t eat and run.” Other signature steaks include the Jessie James, Calamity Jane, Butch Cassidy, Bonnie & Clyde and the Wild Bill. And Diamond Lil’s also features a full bar serving beer, wine and cocktails.
