Steaks are the main focus at Ruby River, with influences from San Francisco to San Antonio and home kitchens to truck stops. Ruby River partners Bob Kimsey and Steve Lowe named their restaurants from a favorite fishing river in Montana, but Utah is home to Ruby River Steakhouses in Provo, Ogden, Sandy, and Salt Lake City. Center cut pork chops, prime rib, ribeye steaks, steak Oscar, the New York cut and babyback ribs are highlights for carnivores. But there are non-meat items like great salads, silver salmon steak, grilled tiger prawns and the seafood fresh catch of the day too.
