Spending New Year’s Eve at Metropolitan is always a good decision, and this year’s festive celebration menu is no exception. The $75 tasting menu at Metropolitan for New Year’s Eve features starter courses of roasted chestnut soup, mache salad and mozzarella roulade followed by smoked scallops on the half shell and seaweed encrusted barramundi with caviar. Entrée choices include American Kobe beef with blue cheese and anise duck confit followed by dessert: chocolate Nutella tart or citrus profiterole rolls. For reservations at Metropolitan, phone 364-3472 or go to TheMetropolitan.com.

• Midway’s Blue Boar Inn is celebrating New Year’s Eve with a special seven-course dinner, live band, and alpenhorn blowing at midnight. Among Blue Boar Inn executive chef Jesse Moreno’s featured dishes will be oysters in cracked pepper and Champagne, truffled cauliflower purée, poached lobster tail and grilled pineapple and coconut pastry cream Napoleon. The Blue Boar will offer two dinner seatings on New Year’s Eve, at 5 p.m. and 7 p.m. The later seating will feature a social hour, party favors a midnight toast, and dancing to live music by Oli Olson and Frank Markosk. Dinner and room reservations at the Blue Boar Inn can be made by phoning 888-650-1400. Visit online at TheBlueBoarInn.com.

• Longtime Park City sushi genius Matt Fischer has become executive chef at the new Yuki Arashi Sushi restaurant at 586 Main St., in the space that previously was home to Kampai. An initial visit to Yuki Arashi was marvelous. The restaurant features what Fischer calls Asian tapas, including sushi, sashimi, rolls and hot plates like prosciutto-wrapped scallops, Kobe beef tetaki, sweet miso black cod and Yuki lamb “lollipops.” By the way, the new restaurant is gorgeous, to boot. Phone 435-649-6293 for reservations.

Quote of the week: I feel a recipe is only a theme, which an intelligent cook can play each time with a variation. —Madame Benoit
