Ichiban 2.0
Changes are afoot at Ichiban Sushi (336 S. 400 East, 801-532-7522), one of Salt Lake City’s pioneering sushi restaurants. Tina Tippetts, formerly of Ruth’s Chris Steak House in Park City, has been named Ichiban’s general manager. And Chef Thomas Ontko has taken over the culinary reins, following his 24-year career working with renowned chefs like Toshio Tomita of Nobu and Daniel Boulud of Daniel restaurant. More recently, he was head sushi chef at Jackson Hole’s Four Seasons Resort. Ontko has unveiled a new “izakaya-style” menu—the sort traditionally found in Japanese pubs. New izakaya menu options include warm grilled-asparagus salad with poached egg and miso vinaigrette, Korean-style chicken wings and steamed Asian buns with five-spice braised pork. And Ichiban’s beverage selection has expanded to include a variety of authentic Japanese liquor, sake and beers, including a single-malt scotch called Yamazaki and Morimoto Imperial Pilsner. New VPN Pizzeria
Idaho-based Flatbread Neapolitan Pizzeria (1044 E. 2100 South, 801-467-2180) has opened in Sugar House and specializes in authentic, wood-fired VPN pizza—which means it’s certified by the Associazione Verace Pizza Napoletana of Naples. These nicely charred pizzas are darned good, but not the only story at Flatbread. Along with a wide range of pizzas—including the classic Margherita—the restaurant offers sandwiches, salads, flatbread and pastas, including a delicious grilled-shrimp panzanella salad, housemade sausage lasagna and Fontina fondue. There’s an interesting list of Dranky Dranks, too, which includes imported and domestic beers, hand-crafted hard cider, cocktails, a full spirits selection, and wines—many of which are special orders, brought into the state especially for Flatbread Pizzeria. SLC POP Dinner Dates
SLC POP—Chef Katie Weinner and Mike Burtis’ twice-monthly “guerrilla” dining experience—has announced dates for their March pop-up dinners. SLC POP is housed at the Nata Gallery (29 E. 400 South), and upcoming 10-course dinners will take place March 2 (sold out) and March 16, priced at $75 per person.
