Congrats to this year’s Utah restaurant winners of the coveted AAA Four Diamond award. As AAA Utah spokesperson Rolayne Fairclough explains, “Only 3.2 percent of the 60,000 AAA Diamond Rated lodgings and restaurants received the prestigious designation. That shows you just how much these winners excel at offering a high level of service.” Two new Utah AAA Four Diamond award winners are Bambara in Salt Lake City and Park City’s Grappa Italian Restaurant. They join Blue Boar Restaurant, The Tree Room, Goldener Hirsch Restaurant, The Glitretind, La Caille, Log Haven and Metropolitan as previous Four Diamond restaurants recognized for their excellence in food, ambiance and service.
Speaking of Bambara: It’s official. Executive chef Dave Jones has made his Bambara debut saying, “I want Bambara diners to experience the integrity and true flavors of the best ingredients—finessed, balanced and ultimately memorable.” To that end, Jones has introduced a Pacific Rim-influenced menu featuring dishes such as sesame-crusted ahi tuna with bamboo rice cake, shiitake mushroom salad and blond miso; tuna tartare with avocado-Thai chili, pea sprout salad, shiro miso crisp and yuzu-ponzu sauce; and scallops with carrot chips, chervil and Meyer lemon sauce.
