Since last week’s review of Baxter’s American Restaurant was published, I returned to try out its Sunday brunch. Oh my. If my experience was any indication, Baxter’s, in very short time, should turn out to be the default downtown brunch destination, especially for lovers of eggs Benedict. Baxter’s serves six different versions: Swedish (with smoked salmon), California (oven-dried tomato, grilled shrimp, avocado salsa), French (with ratatouille and goat cheese), Florentine (spinach and smoked mozzarella), Maryland (with crab cakes) and, of course, the classic. In addition, there’s steak & eggs, a monster serving of biscuits, poached eggs and homemade sausage gravy, apple-cinnamon waffle, crème brulée French toast, and a Southwestern-style breakfast called The Ranchero. It’s a heaping portion of very tasty homemade chili Colorado (tender beef in red chili sauce) with avocado, sweet corn and black beans topped with two poached eggs.
