It’s a miracle! I dropped into Park City’s Fairweather Natural Foods this week and discovered what just might be this planet’s most magnificent muffin. It’s called the Miracle Muffin, and, although I could swear it was loaded with butter and sugar, it wasn’t. I just love the flavor and texture. This marvelous muffin consists of apple, carrot, coconut, bran, nuts and agave nectar for sweetening. It’s a muffin so remarkable that it actually caused a muffin kerfuffle at Fairweather. This is a small, independent store with a tiny kitchen and so only about a dozen Miracle Muffins are baked each day. Well, a regular customer whom I spoke to briefly and who will remain anonymous stopped in one day to buy not just a single muffin, but every Miracle Muffin. “I’ll take them all,” he said, which really pissed off the guy in line behind him who’d planned on making a Miracle Muffin purchase himself. “Hey, you can’t do that!” said the muffin-deprived fella second-in-line. Baxter’s American Restaurant is now open at The Gateway in the space that Butterfly previously occupied. I haven’t eaten there yet, but I’ve been hearing positive things about its updated American classic dishes such as “Don King” halibut, “Not Your Mother’s” meatloaf, “The Burger” and even homemade donuts. On Wednesday, March 26, Lugano Restaurant will host Fisher Vineyards for a very special wine dinner with the Fisher family in attendance. It’s called “The Best of Both Worlds: Napa Valley and Sonoma’s Mayacamas Mountains.” You might recall that Juelle Fisher is an ex-Utahn who found greener pastures in Napa. The cost for the event is $55 per person, and $39 for the optional wine pairing.
