Thanks to everyone who responded to my request for tips on finding an authentic Black & White cookie in Utah. Among others, a reader named Deb and Metropolitan chef Chad Horton sent me terrific Black & White cookie recipes. Better still, I obtained samples of both traditional B&W cookies and an updated, “improved” version (less cakey; crispier) from Joan at the Salt Lake City-based YourCookieMom.com. Who knows? • Chefs Colton Soelberg and Joseph McRae, formerly of Sundance Resort, are opening a new pizzeria in Orem on Nov. 15. Pizzeria Seven Twelve will be “an upscale, yet accessible restaurant” specializing in wood-fired pizza and pastries (McRae was Sundance’s dessert chef for four years). Collectively, McRae and Soelberg have worked and trained with the likes of Jean Jacques Rachou and Robert Cubberly at Le Petite Robert, Jardinière, Rubicon, Spago, Sibbibo and others. Pizzeria Seven Twelve is located in the new Midway Village at 320 S. State in Orem, and its phone is 801-623-6712.
• Congrats to the folks at Gastronomy, Inc. who this month made the list of Top 75 multi-concept restaurants in Restaurants & Institutions, a leading food-industry publication. The only Utah restaurant to make the R&I list, Gastronomy joins prestigious restaurant organizations such as Wolfgang Puck Fine Dining Group and the Smith & Wolensky Restaurant Group in this achievement. With sales of $28 million, Gastronomy was ranked 72nd.
