Local restaurateur/chef Ian Brandt, who is the brain behind Vertical Diner, Sage’s Café and Cali’s Natural Foods, has launched a new enterprise in Trolley Square. It’s called Cafe SuperNatural (great name—wish I’d thought of it!) and is conveniently situated next to Prana Yoga Studio. The modern, attractive, IKEA-style eatery features a 100 percent plant-based, peanut-free and gluten-free menu; all foods are raw, steamed, or cooked with a minimum of oils. The menu includes items such as raw-food wraps, blue-corn winter-squash tamales, hummus, salads, fresh-pressed juices, lattes and more, and there’s also complimentary Wi-Fi. Silver 2.0
After an ownership hiccup (which I forecasted), Park City’s Silver restaurant (508 Main, 435-940-1000) has reopened with new ownership and new menus, but with the same eye-popping décor and ambiance. The restaurant is now owned by a consortium from Jackson, Wyo., called the Fine Dining Restaurant Group. Their Jackson Hole properties include Rendezvous Bistro, Q Roadhouse, Il Villaggio Osteria, The Kitchen and Bistro Catering. The revamped menu at Silver includes items such as Snake River Farms “Black Label” rib-eye, goose-leg confit, robiola porcini ravioli, wild-mushroom Chianti risotto and sides like pomegranate-fried Brussels sprouts, truffle fries and braised heirloom carrots. In addition, the wine cellar has an inventory of more than 3,000 bottles, and a DJ provides tunes on the weekend. Visit SilverRestaurant.com for more information.
