Posted // 2012-02-09 - Recently, a foodie friend sent me a link to a video on the Saveur magazine Web site. It was a short video of a guy peeling an entire head of garlic. And, I do mean short video -- he peeled the garlic in a matter of seconds, using no special tools.
Well, I still wasn't sure I believed what I was seeing on the video. So, I decided to try the technique myself, and capture it on video for everyone to see.
I can guarantee that there are no special tricks or smoke and mirrors involved here. It really works! This method of peeling garlic might just be the single most useful kitchen time-saver I've ever come across.

Holy shit, that's great! And all these years I've been using the side of my knife to smash each clove. I used to try and smash garlic the Martin Yan way but I think you have to be Chinese to pull that one off effectively.
