Monday Meal: Miso-Ginger Salmon

Grilling salmon fillets is easy and quick. And, salmon is very versatile, taking well to myriad marinades and sauces. A friend of mine grills his fillets with nothing more than a smear of mayo on each side which helps keep the salmon from sticking to the grill. Here is a simple recipe for grilled salmon with a miso and fresh ginger marinade. The end result is very subtle; the marinade doesn't overwhelm the salmon, but gives it a very tasty Asian influence.  

Ingredients (for 4 servings)

4 6- to 8-oz salmon fillets, skin on

2 tbsp. minced fresh ginger

1/4 cup soy sauce

1/4 cup mirin

1/4 cup miso paste 

1 tbsp. sesame oil

2 tbsp. rice vinegar

1/4 cup minced scallions or chives

Salt and black pepper to taste

Technique:

Place all of the ingredients except the salmon, salt and pepper into a shallow bowl or baking dish.

Whisk together the ingredients until well-combined.

Salt and pepper the salmon fillets and place them in the dish with the marinade. Turn to coat well, spooning some marinade over the top. Put the dish into the fridge for 30 minutes before grilling.

Heat the grill to high. Grill the salmon on each side for 3-4 minutes, depending on thickness, with the grill cover closed.

I like to serve the salmon drizzled with a little citrusy ponzu or yuzu sauce.

This salmon preparation is also great for salads. Just slice the salmon into strips and serve atop a bed of your favorite greens with an Asian-style vinaigrette.
