The Best Damned Turkey Recipe Ever!

- Posted // 2010-11-22 - Many years ago I shared my favorite Thanksgiving (or, anytime) turkey recipe with City Weekly readers. It was a huge hit and I get requests for it during the holidays every year. It's actually a combination of a trio of my favorite recipes, all wrapped up in one. It takes a bit of advance preparation -- there's overnight brining involved, for example. But the results are phenomenal. This really is the best damned turkey recipe I've ever tried. Ok, you're on, Ted! I gave you such a bad time about brining last year that I bought a turkey, it's thawing in my frig and I'm gonna brine it tonight! Gee, it's like the prom I never went to in high school. I want to take it with us to my sis-in-law's on Thursday because she has a thing for "smoked" turkeys. I think they taste like marinated baseball mitt.

Posted // November 25,2010 at 08:36 - I cooked it yesterday and it was fantastic! Kosher salt brine with sage, rosemary, peppercorns, bay leaves, carrots and an onion chopped up in the brine. Then I partially stuffed it with the brine veggies and herbs and cooked it in a convection oven. Girlfriend said it was the best turkey she's ever had! Now, I'm working on a layered pumpkin-dark chocolate pie with a thin sour cream and sugar frosting. Ted, please, get over here, I can't be alone with a pumpkin-dark chocolate pie all day! I'm like Woody Allen sipping Woolite in the gutter.

I know for a fact that Ted's brining method is as simple as it is awesome, makes for a great bird, but I think I'm more interested in brining myself this year.
